Meatless Wednesday

I'm trying to be more mindful about what I eat and how it impacts the earth. I don't claim to be an expert on sustainability/ eco-friendly living or try to impose it on anyone, but I have learned a few things living in San Francisco for 2 years and I intend to do what I can.

Here's what I ate today:
  • Breakfast: Barbara's Bakery Puffins cereal, slice of toast (no picture)
  • Snack: Quinoa with roasted beets
  • Lunch: MorningStar veggie patty with red leaf lettuce, kimchi and red pepper bean paste, pickled garlic cloves (I ate it Korean lettuce wrap style- it wasn't that good)
  • Snack: Japanese rice crackers
  • Dinner: Lentil soup, toast (no picture)
